TRADITIONALLY SINCE 1912
Run by the same family since 1912, the Roasting operation
thoroughly maintains the traditional system of Wood Roasting
and Air Cooling, according to high standards of quality.
WOOD ROASTING
The artisanal process of Wood Roasting applied enhances
the flavor and the natural aroma of coffee, differently
from most roasters, who use the gas or diesel roasting process.
Wood Roasting is a slower process, but it yields a uniform
roasting of both the inside and the outside of the grain,
leading to an extremely pleasant high quality drink .
AIR COOLING
The cooling process after roasting is done by suction, differently
from other roasters who, in order to accelerate the process,
use the water cooling process, which leads to the oxidation
and acidity of the coffee, making its taste bitter.
The air cooling process after roasting is a natural method
which requires more time, but in doing so the coffee is
free from humidity and has a much longer useful life, preserving
all its natural features and the authentic flavor of the
bean.
NATURAL PROCESS
All the beans of green coffee arrive packaged in jute sacks
– a natural fiber produced and washed without the
addition of chemicals and free from hydrocarbon.
The whole roasting process is natural, without the addition
of any chemicals.
